Grape variety: Gamay
After harvesting, the grapes are cooled to 5 degrees without destemming. Fermented with semi-maceration carbonic. Only wild yeasts are used for fermentation. Fermentation and aging use cement tanks and glass fiber tanks. No sulfites are added during vinification, only in very small amounts before bottling. The cuvée name Gigi is the nickname of his wife Giselaine.
Owns the highest altitude field in Morgon Village. The grapes are harvested slowly to full ripeness and vinified in semi-maceration carbonic. Tannins and high concentration overwhelm other morgons.
