At the juice stage, hyperoxidation (oxidation before fermentation). Transferred to 1600 liter concrete egg tanks, surreal fermented without any racking and aged for 16 months. Weeperfontein Chenin Blanc is Johann's favorite Chenin Blanc. It is made without any skin contact and is matured for 16 months in a concrete egg tank just like Brutal. Very mineral, with good acidity. In addition to the cheap range of Chenin, this Chenin is one that you should know.
