Grape variety: Pinot Noir
Pinot with three methods: "destemming", "whole bunch" and "carbonic maceration" . Hand-picked grapes from Boxer 's Vineyard (biodynamic, volcanic soil on lime), fermented with wild yeast, skin contact for 2 weeks. Transferred to oak barrels (old French barrels) and aged for about 9 months per cuvée. Blended and bottled with 20ppm antioxidants. Non-filtered, no clarifiers used.
