Cultivated mainly from Pinot Meunier from the fields of chalky soil in the southwest of Epernay. Pinot Meunier, which is over 80 years old, produces high-quality champagne with a moderate thickness and mineral balance.
An assemblage of 80-year-old Pinot Meunier, Chardonnay from Coteaux Sud Epernay, and Pinot Noir. Pressed with a rare square direct press used in the 70's. Fermented by variety in cement tanks. Second fermentation in the bottle with Pinot Noir red wine. Sur Lee 24 months. Dosage 9g/L.
