You can feel the fruit juice in the scent of raspberry and black plum. Spicy and full-bodied bitterness, less soft silky tannins. The sweetness of licorice is comfortable after.
Use Andre from a 36-year-old field (granite) facing southeast. Harvested by hand, sorted, 80% destemmed and pressed, 20% whole bunch fermentation at room temperature for 8 days in 500L to 750L open tanks. After pressing, it is transferred to 225L old barrels and stainless steel tanks and aged for 6 months in Surrey. After that, to equalize the taste, transfer it to a stainless steel tank for blending, and bottle it by gravity without a filter.
Nabosso is a small winery founded in Slovakia by Slovak Andrei and German Nadia (wife). After working as a restaurant owner for 10 years, André turned to winemaking. Worked at several wineries to learn natural winemaking. My wife Nadia met natural wine when she lived in England in 2012, trained at a winery in Burgenland, then worked at a wine importer in Copenhagen, moved to Slovakia with Andrei, and built the current winery.
