We use the Saperavi variety cultivated by Mr. Fujiwara in Tango, Kyoto Prefecture. A grape native to Georgia, it is a rare variety that is rarely cultivated in Japan. It has a distinctive acidity, and when you drink it in a burgundy glass, you can feel the mellowness hidden in the acid and the elegant fruit flavor.
