After harvesting, all grapes are destemmed and placed in large stainless steel tanks. Keep cold with dry ice for 1 day before fermentation. The maceration is short, about one week, and is a light extraction. Pumping over once a day. After fermentation, it is transferred several times and aged only in stainless steel tanks for 7 months.
