A historic organic Bordeaux, black grapes grown in clay-lime soil in the south of Entre de Mer surrounded by the Garonne and Dordogne rivers are fermented in stainless steel tanks and aged in wooden barrels for 12 months.

Bordeaux is one of the world's leading wine producing regions. The Entre-de-Mer district stretches across the delta of the Dordogne and Garonne rivers. Here, in 1920, Château Haut Marais was born and has been handed down by the Boudon family for generations. Patrick Boudon who is the third generation owns the vineyard of 27ha now.
Since his father's generation, he has been promoting biologic farming methods that do not use herbicides or chemical fertilizers, and in 1995 acquired the organic farming certification "ECOCERT". The soils are clay-lime and clay deposits, producing wines with a concentrated and refined taste. The grapes are fenced and set about 30 cm higher than the average Bordeaux. This method is used to maximize the vine's natural upward force, while avoiding disease from exposure to lots of sun and wind. In addition, by leaving thickets and ditches around the vineyards, the grapes and nature can coexist in a balanced and stress-free environment. The grapes made in this way are gently pressed over a period of 4 hours after harvesting. Juice with no miscellaneous flavors is squeezed out. The vinification is done in a simple manner with as little human effort as possible, creating a very well-balanced wine that is elegant, fruity and soft. In fact, this chateau is also famous as the place where Marc Tempe, the master of Alsace Biodinami, trained to make natural wine when he was 22 years old, and is the origin of his wine making.
