Oligocene 23-million-year-old soil is exposed and rich in iron oxide, with both clay and porphyry colored red. South-west facing clay-limestone soil. 40 years old. Bolenberg has a lot of morning dew and frost, so there is also some botrytised grapes, which give it a complex aroma of spice, honey and rose. By fermenting and maturing only with foudle, it is exposed to oxygen to some extent and the bitterness derived from the variety is softened.
