Grape variety: Viognier

Due to the DNA of the grapes, we decided to ferment whole bunches. It is well suited to the Swartland climate and has good character even at low alcohol levels. The aroma is full of Viognier fruit, but the stems control the character well. Fermented in whole bunch for 13 days. After that, it is aged for 10 months in a 500L French old wooden barrel.
